GROWING NOTES

Sow seeds 1/2 inch deep, and 1/2 inch apart in rich, well cultivated soil. Do not let soil dry out during germination. Thin to 4-6 inches apart. Water regularly. Parsnips are tender and flavorful in the fall. Harvesting can begin as tops die down, however flavor will improve after a few light frosts. Germination can be slow, so mix in some lettuce seeds to help mark the row.
